Ingredients: Red beets, Balsamic Dijon Mustard, Fresh Mint, Extra Virgin Olive Oil, Salt, and Fresh Ground Pepper.
A marinade of Classic Aged Balsamic, Dijon Mustard, EVOO , Salt & Pepper.
Boil beets unpeeled with 3” of the stem. When done, peel with your hands in a bowl of ice water. (This is an easy way to handle the hot beets.) Slice in 2 directions. Beets will give you 2 different flavors. Add to marinate and incorporate with julienne sliced Mint. Serve room temperature.
