Ingredients: Chicken Thighs skinless bone-in, Anchovy's, Garlic, White Wine, Red Wine Vinegar, Flour, fresh Rosemary springs, EVOO, Salt, and fresh Pepper. Marinade ingredients: 1 container of Anchovy's, 3-4 crushed Garlic Cloves, 1/2 glass White Wine and 1/2 glass Red Wine Vinegar. This should be done first. In a pan, add EVOO and 4 long Rosemary springs. Let it come to heat, and when Rosemary starts to brown, remove it. Add salted, peppered, and flour-dusted chicken to pan. Brown and remove. Keep chicken covered with foil. Add Marinade to the pan and at high heat reduce to 1/2. Now return the chicken to the pan. Cover and reduce heat. Simmer till chicken is thoroughly cooked. Serve with Polenta, Rice, or just Bread.
